Crockpot African Peanut Soup |
- 1/2 yellow onion diced
- 2 green onions chopped
- 1 red pepper chopped
- 2 cloved garlic minced
- 1/4 cup uncooked brown rice
- 4 cups vegetable broth
- 1 tsp chilli powder
- 1 tsp black pepper
- 1 can crushed tomatoes (400g can)
- 1/2 cup peanut butter
- Tabasco (to taste)
- Sour Cream (to serve)
- Chuck all the veggies, spices, rice, broth, canned tomatoes in the Crockpot and cook for 6 hours on low
- After 6 hours, add the peanut butter and cook on high for an additional 30 minutes
- Serve with a dollop of sour cream and some extra tabasco to taste.
- Marvel at how flippin' amazing this recipe is
My variations on her original recipe were;
- I halved the ingredients, giving us a generous 4 portions
- I added some tabasco hot sauce at the beginning of cooking (plus a little more to taste once I'd served it up) along with extra black pepper to spice it up for our tastebuds
- Although I did use 4 cups of broth, it was runnier than I expected. I think you could reduce this down to 3.5 cups
